Lab: Think Global & Buy Local
You will be making a meal based on locally-sourced food. BC is known for its salmon. Watch this video to get inspired about meals you could cook.
For this lab, you will create a dinner entree using locally grown and produced food. The challenge is to create a meal using only food products from BC. You can choose a recipe from the internet or a cookbook, but it may require some adaptions if you can't find a locally grown or produced ingredient. Using BC salmon is one example. You can choose any protein source you like, the key is to make sure it's from BC. Include two side dishes, ideally one is a fruit/vegetable, and the other is a whole grain.
Before beginning this lab, shop around to find out what kinds of food are produced locally. You will need to read the labels! Once you have an idea of what local ingredients are available to you, then you can start creating your meal.
**VERY IMPORTANT**You will need to report on each food item used in your meal and WHERE each one was grown or produced.

LAB INFORMATION
1. You will need to find a recipe that best incorporates local ingredients. Answer the questions on the side dishes.
*REMEMBER* to include the following in the ingredient list of your lab sheet:
- where you purchased each item
- where each item was grown or produced
- explain how you know the origin of each item
PHOTOS
2. For all labs, you need to take a minimum of 8 pictures of you preparing this product.
- You must be clearly visible, including your face, in at least 4 of the pictures. You can take selfies or have a friend or family member take photos of you in action. Make sure to take images of the entire process. Marks will be taken off if you do not.
- You must clearly show the steps you have taken to make the product. Take photos of yourself measuring the ingredients, dicing, sifting, cutting in, folding, rolling, whisking, flipping, etc.
- You must have photos of your final product. Take an image of it as a whole. Then have a final presentation image where you plate your product so that it is ready to serve. An example would be showing your protein and two side dishes cooked. Then find a decorative plate or tray to artfully display them on. You can also add garnishes, a napkin, a drink, etc.
EVALUATION
3. You must fill out an evaluation of your product. This includes an evaluation done by yourself and an adult. Be sure to use descriptive words and discuss the process, the product, expectations, previous experience, and anything else you observed while making this product. Use your five senses in your descriptions. Be detailed and creative with your word choice. Ask the adult who is tasting your food to do the same in their evaluation.
